Food Intolerance Testing, also called Carroll testing, is a method of determining what types of food a person does not digest effectively. Inadequate digestion of foods ultimately results in inflammation and a variety of symptoms, ranging from decreased energy to joint pain to diarrhea.
Food Intolerance Testing (FIT) was developed by Dr. Otis G. Carroll, who practiced in Spokane, Washington from 1917-1962. He found that whether patients truly recovered from their illnesses or not depended on the incorporation of dietary advice based on this test. Many physicians continue to use this method of testing with great results for their patients.
